We challenge you to an Arc of Taste Scavenger Hunt for
local endangered food on the Slow Food Ark of Taste. Here we go with the second food we found: Plymouth Rock Chicken.

As a hardy, docile, broody and excellent producer of both meat and eggs, which it lays year-round, the Plymouth Rock Chicken is a quintessential American breed. This bird was developed in the mid-19th century as a dual-purpose chicken. The chicken has yellow skin and lays eggs that are varying shades of brown. The Plymouth Rock was probably developed in Massachusetts, hence its name, but until World War II, the Plymouth Rock chicken was not known in the US. The Plymouth Rock is considered to be in the recovering category and emphasizes that the bird is still in need of continuing support, promotion and conservation.

Recipe for Lemon & Thyme Roasted Chicken
1 Plymouth Rock chicken, ~ 4 lbs
2 lemons, quartered
Salt and pepper
Heat oven to 425F. Clean chicken outside and cavity and pat dry.
Salt, pepper, thyme and lemons stuffed into cavity. Salt and pepper outside.
Roast on its side for 20 minutes. Turn to other side and roast 20 min.
Turn breast down and roast 20 min. Baste with butter, finish breast side up for 15 minutes. Remove from oven, rest lightly covered breast down for 15 minutes. Remove lemons from cavity before carving. Squeeze juice from lemons on top of carved chicken before serving. @cristianobonino
