#Cheese2013 Da Helsinki è lo chef Sasu Laukkonen che ci racconta questa volta quale formaggio vorrebbe salvare:
“Sto cercando di salvare il Kyyttö Armas. Il latte di vacca Kyyttö è diventato molto raro e non è più sufficiente per produrre il formaggio. Questa razza bovina tradizionale era praticamente scomparsa in Finlandia, ma adesso sta piano piano recuperando terreno."

From Helsinki, Chef Sasu Laukkonen tells us about which cheese he would like to save:
"I am trying to save Kyyttö Armas cheese. It was produced until last year, but now there is not enough Kyyttö (Eastern Finncattle) milk to make it. This breed is our traditional cow, and was almost extinct some years ago but now is reviving.”
